For restaurant chefs across Britain, the kitchen has always been a crucible. Flames licking from gas burners, steam billowing from boiling pots, and the relentless pressure of keeping plates moving during service. But this summer, what was once merely intense has become genuinely hazardous.
Tens of thousands of kitchen staff have been forced to labour through what many describe as “furnace-like” conditions as successive heatwaves swept across the country. Some establishments—restaurants, cafés, bakeries—grew so sweltering that they had little choice but to shut their doors or drastically curtail their opening hours. The Health and Safety Executive still imposes no statutory ceiling on workplace temperatures, a fact that has drawn sharp criticism from the TUC and labour advocates.
Now, a growing number of culinary professionals are pioneering an unexpected solution: ditching gas altogether in favour of electric induction technology. The switch can slash kitchen temperatures by as much as 10°C, while simultaneously trimming energy bills and reducing exposure to harmful pollutants. It’s a transformation that challenges decades of culinary tradition—and one that many chefs, initially sceptical, are now embracing.
From Flames to Fields: The Induction Revolution
The gas hob has long been the beating heart of professional kitchens. There’s an undeniable theatre to it—the roar of turbo burners, the visible dance of blue flames, the sense that you’re wielding elemental power. But that theatre comes at a cost.
Jeremy Pang, a third-generation Chinese chef who founded the School of Wok in London, knows this tradition intimately. His craft centres on achieving “wok hei”—literally, the breath of the wok—a complex interplay of smoke and heat that imparts the distinctive char and flavour to properly executed stir-fries. The notion that electric cooking could replicate this seemed almost heretical.
“I worried we wouldn’t be able to get the temperatures we needed,” Pang admits. “There’s that sense of theatre with fire and flames. It feels quite traditional and exciting.”
Those concerns evaporated almost immediately. Using carbon steel woks heated on induction plates with a judicious amount of oil, Pang discovered he could readily achieve the 350-400°C temperatures essential for authentic wok hei. The heat is controllable, focused, and—crucially—stays precisely where it’s needed.
“Gas cookers are incredibly good equipment, but you get so much heat off them, it’s a huge problem,” he says. “We have found that we can get just as high temperatures, and just as good cooking, with electric.”
The Numbers Don’t Lie
The financial case for switching has been documented in a report from the Global Cooksafe Coalition, and the findings are striking. One British gastropub that made the transition cut its energy consumption by almost two-thirds, saving £9,000 annually on utility bills alone. The upfront cost of retrofitting was recouped within three years, and projections suggest the establishment could pocket around £65,000 over the next decade.

Chet Sharma, chef-patron at Bibi in London, has noticed the difference in his own kitchen. “A hot kitchen doesn’t really exist with induction, since there is no heat loss,” he explains. “Induction is super-efficient. It keeps our bills down and keeps the staff happier, not sweating away at the stoves all day.”
The benefits extend beyond temperature and economics. Ellen Chew, who runs Rasa Sayang in London’s Chinatown, discovered an unexpected advantage: the ambient noise in her kitchen has plummeted. Turbo gas burners are notoriously loud, but induction hobs operate in near-silence.
“The whole atmosphere and environment is different now—it’s super quiet,” Chew says. “Some chefs are difficult to convince to move away from gas, but when you show them the difference, it’s a game-changer.”
Chantelle Nicholson, who deliberately specified electric hobs when opening Apricity in Mayfair in 2022, has also found the cleaning advantages compelling. Induction surfaces are flat, smooth, and wipe clean in moments—a stark contrast to the grime-encrusted grates and burners that characterise gas cooktops.
“I used to have burn marks all up my arms from scrubbing gas hobs,” Nicholson recalls. “And when anything goes wrong with the gas, it’s a total nightmare to get it fixed. Induction is controllable and really reliable.”
Diners seated at Apricity’s chef’s table have noticed the calmer kitchen environment, and the restaurant has been recognised with a coveted Michelin Green Star for its environmental efforts.
The Hidden Dangers of Gas
Beyond comfort and cost, there are health considerations that are prompting reassessment across the industry. Research has increasingly linked gas cookers to indoor air pollution, with studies suggesting a connection to respiratory problems including asthma—particularly concerning in environments where staff spend extended hours cooking.
“To me, electric is clearly the way forward,” Nicholson states.
The environmental credentials of induction cooking are also superior. The gastropub featured in the Global Cooksafe Coalition report saw its carbon emissions tumble by roughly two-thirds. As Britain grapples with its commitment to net-zero targets, every sector will be expected to contribute—and professional kitchens represent a significant and largely overlooked source of emissions.
Camilla Born, chief executive of Electrify Britain, a body funded by energy companies that campaigns for electrification, argues that government must do more to incentivise businesses to make the transition.
“The prime minister has made some welcome moves on business rates, but his government can go further,” she contends. “He should look to make electricity cheaper—by removing levies and policy costs from existing bills—and quicken the rollout of the heating and cooking systems that run on it.”
Australia offers a glimpse of what’s possible. Luke Burgess, owner of Scholé in Sydney, measured the time spent cleaning his cooktop and found that induction technology slashed this from 24 minutes to just 21 seconds. His calculations suggest this alone saves the equivalent of more than £15,000 in annual wages.
Why It Matters
The debate over kitchen temperatures might seem like a niche concern, but it touches on several of the most pressing issues facing Britain today. Tens of thousands of workers—often low-paid, frequently from migrant backgrounds—have endured intolerable conditions this summer with no legal protection. The failure to establish a maximum working temperature is a scandal that successive governments have failed to address.

Beyond labour rights, the push toward induction cooking intersects with public health, climate commitments, and the economics of small businesses struggling with soaring energy costs. The hospitality sector, still recovering from the pandemic and now facing a cost-of-living squeeze, desperately needs solutions that reduce outgoings without compromising quality.
The chefs pioneering this transition are demonstrating that sustainability and profitability need not be in conflict—that going green can also mean going into the black. If even a fraction of the UK’s restaurants follow their lead, the cumulative impact on worker welfare, energy consumption, and carbon emissions would be substantial. The gas ring has served its purpose admirably for generations. But as our kitchens grow ever hotter and our climate ever more volatile, the writing may finally be on the wall for the blue flame.
